This is a good side dish for roasted pork. The parsnips have a nutty flavor that goes well with maple.
Ingredients:
3 cups parsnips (or both mixed) or 3 cups carrots (or both mixed)
2 tablespoons maple syrup
Directions:
1. Peel and slice parsnips.
2. Steam about 8 minutes or just till tender.
3. Drain and return to pan without steamer rack.
4. Stir in syrup and coat well.
5. Garnish with chives if desired.
