Maple-Orange Sweet Potatoes |

What's a holiday meal without sweet potatoes? We turned to the microwave for this casserole to free up the oven. Ingredients:
2 1/2 pounds peeled sweet potatoes, cut into 1/4-inch-thick slices |
1/3 cup fresh orange juice |
1/4 cup maple syrup |
2 tablespoons brown sugar |
1 tablespoon stick margarine or butter, melted |
1/2 teaspoon salt |
1/8 teaspoon ground cloves |
1/4 cup chopped pecans, toasted |
Directions:
1. Place the sweet potato slices in a 2-quart casserole. 2. Combine juice and next 5 ingredients (juice through cloves) in a small bowl. Pour juice mixture over potatoes. Cover loosely with plastic wrap, and microwave at HIGH 10 minutes. Stir after 5 minutes. Uncover, and microwave at HIGH 5 minutes or until potato is tender. Sprinkle with pecans. |
