This maple oatmeal scone is from The Barefoot Contessa's Cookbook.These scones are so yummy but then everything I have ever made of hers is outstanding! Hope you enjoy them as much as my family has! Once again these are great with lemon curd. Read more . You guys are probably thinking I put lemon curd on everything by now! Ingredients:
31/2c. ap flour |
1c.ww flour |
1c. quick cooking oats |
2t. baking powder |
2t. sugar |
2t. salt |
1 pound cold unsalted butter diced |
1/2c. cold buttermilk |
1/2c. maple syrup |
4 extra large eggs lightly beaten |
1egg beaten with 1t. water for egg wash |
glaze |
11/4c. confectioners sugar |
1/2c. maple syrup |
1t. vanilla |
Directions:
1. Preheat oven to 400 2. In mixing bowl combine flour, oats, baking powder, sugar, and salt 3. Blend the butter in at lowest speed until it is in pea sized pieces 4. In a bowl combine buttermilk, eggs and maple syrup 5. Add quickly to flour mixture 6. Mix till just blended 7. Dump onto floured surface 8. Roll the dough 1in. thick, you should see lumps of butter in the dough 9. Cut in 3in. rounds 10. Brush with egg wash 11. Bake 25 min. 12. Mix glaze ingredients 13. When scones are cool drizzle with glaze |
