From Cooking by Moonlight Ingredients:
2 cups flour |
1 teaspoon baking soda |
1 teaspoon baking powder |
1/4 teaspoon salt |
1/3 cup light brown sugar |
1/4 cup vegetable oil |
1/2 cup real maple syrup |
1/2 cup plain yogurt or 1/2 cup sour cream |
1 large egg |
1 teaspoon vanilla |
1/2 cup chopped pecans (optional) |
Directions:
1. Preheat the oven to 350. 2. Lightly grease 8 muffin cups. 3. Combine dry ingredients and set aside. 4. Beat oil and maple syrup with a mixer for 2 mintues. 5. Add the yogurt egg and vanilla. Slowly add the dry ingredients, mixing until just blended. 6. Pour the batter evenly into the muffin cups. 7. Bake for 25 minutes or until done. |
