Maple syrup really gives an extra sweet edge to the carrots. If you use salted butter, the dish needs very little seasoning. Use proper Maple Syrup, corn syrup with maple flavouring is not the same thing at all. Read more . This dish is simplicity itself. Ingredients:
1.3 kg (3 lbs) carrots |
for the maple glaze |
50 g (2 oz) butter |
1 tablespoon real maple syrup |
1 rounded tablespoon wholegrain mustard |
Directions:
1. Peel and cut the carrots into batons. (You can do this up to 24 hours ahead and keep them in a polythene bag in the fridge). 2. Put the carrots into a saucepan, pour in enough boiling wate to just cover. 3. Bring back to the boil, then cover and cook for 4-5 minutes until the carrots are just tender. 4. Meanwhile, put the butter and maple syrup in a small pan. Heat until the butter melts then stir in the mustard. Take off the heat. 5. Drain the carrots and put them into a warmed serving dish. 6. Pour the warm maple glaze over the carrots. 7. Taste and adjust seasoning to suit. |
