Maple Macadamia Nut Cookies |

My son, Jason, and I had fun coming up with this cookie recipe. Every bite is packed with maple flavor, vanilla chips, milk chocolate chips and chopped macadamia nuts. Ingredients:
1-1/4 cups butter, softened |
1-1/2 cups confectioners' sugar |
1 egg |
2 tablespoons maple flavoring |
1 teaspoon vanilla extract |
2 cups king arthur unbleached all-purpose flour |
1 teaspoon baking soda |
1 teaspoon cream of tartar |
2 cups quick-cooking oats |
3/4 cup white baking chips |
3/4 cup milk chocolate chips |
3/4 cup chopped macadamia nuts |
maple icing: |
1-1/2 cups confectioners' sugar |
1/4 cup heavy whipping cream |
3 teaspoons maple flavoring |
1 teaspoon vanilla extract |
1/8 teaspoon salt |
Directions:
1. In a large bowl, cream butter and confectioners' sugar. Beat in the egg, maple flavoring and vanilla. Combine the flour, baking soda and cream of tartar; gradually add to the creamed mixture. Stir in the oats, chips and nuts. 2. Drop by heaping teaspoonfuls 2 in. apart onto greased baking sheets. Bake at 350° for 10-12 minutes or until lightly browned. Remove to wire racks to cool. In a bowl, combine icing ingredients until smooth; drizzle over cookies. Store in the refrigerator. Yield: About 4-1/2 dozen. |
