Do not know where I got this but I wanted to share it. A sugar free and 16% reduced caorie from the traditional. Ingredients:

1 lg. acorn squash, seeded and cut into quarters |
butter flavored vegetable cooking spray |
1 lg. tart cooking apple, unpeeled, cored, and sliced |
1/4 cup raisins |
1/4 cup chopped walnuts |
1/2 hot water |
maple flavored syrup |
ingredients |
1 cup apple juice |
2 1/2 tsp. cornstarch |
1/4 cup sugar substitute |
1 tbs. margarine |
1 tsp. maple extract |
1 tsp. vanilla extract |

Directions:
1. 1)Place squash, cut sides up, in baking pan; Add 1/2 cup hot water. Bake in preheated oven at 400ยบ until squash is tender about 30 to 40 minutes. 2. 2)Prepare the maple glaze first: 3. 3)Mix apple juice, cornstarch and the sugar substitute in a small saucepan; heat to boiling. Boil, stirring constantly, until thickened, about 1 minute. 4. 4)Remove from heat; add margarine, maple extract and vanilla extract, stirring until margarine is melted. 5. 5)The Squash recipe: 6. 6)Spray medium skillet with cooking spray; heat over medium heat until hot. Add apples, raisins and walnuts; cook over medium heat until apple slices are tender, about 5 minutes. Add maple flavored syrup; cook until heated through, 2 to 3 minutes. 7. 7)Place squash wedges on a serving platter; spoon apple mixture over squash. Serve. |
