Maple & pumpkin is a delicious autumn flavor pairing, making these easy-to-make muffins perfect for the fall holidays! Ingredients:

1 1/2 cups flour |
2 teaspoons cinnamon |
1 teaspoon baking soda |
1 teaspoon baking powder |
1/2 teaspoon nutmeg |
1/2 teaspoon ground clove |
3/4 cup granulated sugar |
1/2 cup brown sugar, packed |
1/2 cup vegetable oil |
2 eggs |
1/2 cup whole milk |
1 cup pumpkin puree |
maple glaze |
1 cup confectioner’s sugar |
1 tablespoon whole milk |
2 teaspoons maple extract |
Directions:
1. Pumpkin Muffins: 2. Preheat oven to 350 degrees. Line or grease 6 muffin cups. 3. In a medium bowl, combine all dry ingredients. Set aside. 4. In a large bowl, beat together oil, eggs and milk. Stir in pumpkin puree. Add in dry mixture and stir until just incorporated. 5. Spoon batter into muffin cups and bake for 20 minutes. Remove from oven and let cool on a wire rack. 6. Maple Glaze: 7. Whisk all ingredients together. If mixture is too thick, thin with milk – a few drops at a time. 8. Frost muffins immediately. |
