Maple-Glazed Acorn Squash |

From one of Charlotte's many recipe notebooks. Cut out of a magazine and marked with an asterisk. I've made a couple of changes. The original called for maple-flavored syrup and probably assumed you'd think of greasing the pan. Ingredients:
2 acorn squash |
2/3 cup maple syrup |
1/2 cup soft breadcrumbs |
1/4 cup margarine, softened |
Directions:
1. Trim ends of squash; then cut cross-wise into 1-inch slices. Discard seeds. 2. Arrange squash slices in a single layer in a large baking pan prepared with non-stick spray. Season lightly with salt & pepper. 3. Cover and bake at 350* for 30-35 minutes. 4. Combine remaining ingredients and spread evenly over squash. Return to oven and bake UNcovered for 15 to 20 more minutes, basting occasionally with the accumulating juices. |
