These delicious muffins combine the taste of french toast and maple syrup.
Ingredients:
french toast topping ingredients
3 tablespoons milk
1 egg, slightly beaten
1 teaspoon vanilla
6 slices(3 1/2 cups) cinnamon swirl bread, crusts trimmed, cut into 1/2 inch cubes.
muffin ingredients
1 cup milk
1/2 cup butter, melted
1 teaspoon maple flavoring
2 cups all-purpose flour
3/4 cup firmly packed brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
sugar topping ingredients
1/4 cup maple syrup
2 tablespoons sugar
1/4 teaspoon cinnamon
maple butter
1/2 cup butter, softened
2 tablespoons firmly packed brown sugar
1/4 teaspoon maple flavoring
Directions:
1. Heat oven to 375 degrees F.
2. Combine all French toast topping ingredients in medium bowl; set aside.
3. Combine 1 cup milk, melted butter, 1 egg and maple flavoring in another medium bowl.
4. Combine all remaining muffin ingredients in large bowl.
5. Stir milk mixture into flour mixture just until mixed.
6. Spoon batter into greased 12-cup muffin pan
7. Spoon French toast topping evenly over batter; press down slightly.
8. Bake for 20 - 25 minutes or until toothpick inserted in center comes out clean
9. Immediately brush muffins with maple syrup.
10. Combine sugar and cinnamon in small bowl.
11. Sprinkle over glazed muffins
12. Cool 5 minutes; remove from pan.
13. Serve warm with Maple butter***
14. Combine ingredients for maple butter.
15. Beat until creamy
16. Store covered in refrigerator for up to 3 weeks
