These are delicious for breakfast,brunch or just a snack. Ingredients:
2 c flour |
1 c whole wheat flour |
1/2 c granola with almonds |
1 tb baking powder |
1 tsp salt |
1 c milk |
1 c pure maple syrup |
1/2 c canola oil |
2 eggs,lightly beaten |
1 recipe maple frosting below(optional) |

Directions:
1. Preheat oven to 375' 2. Line 18 3-1/2 muffin cps with paper bake cups. 3. Combine flours,granola,baking powder and salt.Combine milk,syrup,oil,and eggs;add t5o flour mixture. Stir till moistened(batter will be lumpy). Spoon into muffin cups,filling each 2/3 full. 4. Bake 15 mins. or till toothpick comes out clean. Cool in muffin cups on wire rack 5 mins.. Remove from cups. 5. Spoon Maple Frosting atop muffins;sprinkle with additional granola 6. Maple Frosting: In bowl,beat 2 oz softened cream cheese 30 seconds. Add 2 TBS. powdered sugar and 1 TB maple syrup,beat till smooth. |
