MAPLE CORN MUFFINS This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Olsen Estate in Grand Prairie, Texas in 1982. Ingredients:
2 cups flour |
1 cup yellow cornmeal |
1 tablespoon baking powder |
3/4 teaspoon salt |
2 eggs |
1/4 cup light brown sugar |
1 cup milk |
1/3 cup maple syrup |
3/4 stick butter melted |
Directions:
1. Mix flour, cornmeal, baking powder and salt in a large bowl. 2. Whisk eggs and sugar in another bowl until smooth then add milk and syrup and whisk. 3. Pour over dry ingredients and add 4 tablespoons of the melted butter then fold until moistened. 4. Fill muffin cups and bake 30 minutes at 350 then brush tops with remaining butter. |
