These are good around the holidays... never too early to start thinking and planning... Ingredients:
1 cup firlmly packed brown sugar |
1 cup granulated sugar |
1/2 cup good maple syrup (not the imitation stuff) |
1/2 cup whipping cvream |
1 tablespoon light corn syrup |
1/8 teaspoon salt |
1 tablespoon butter |
1 teaspoon vanilla |
2 cups chopped walnuts |
Directions:
1. Butter sides of a heavy large saucepan. 2. Combine sugars, maple syrup, whipping cream, corn syrup, and salt in pan; stirring constantly, cook over medium-low heat until sugars dissolve. 3. Using pastry brush dipped in hot water, wash down any sugar crystals on sides of pan. 4. Attach a candy thermomenter to pan, making sure thermomenter does not touch bottom of pan. 5. Increase heat to medium and bring to a boil. 6. Cook, without stirring, until mixture reaches 234 degrees. 7. Test about 1/2 teaspoon mixture in ice water. 8. Mixture will easily form a ball in ice water but will flatten when held in 9. your hand. 10. Remove from heat and stir in butter and vanilla. 11. Using medium speed of a mixer, beat until candy thickens and begins to lose its gloss (about 3 minutes) 12. Stir in walnuts. 13. Drop by teaspoonfuls onto waxed paper; cool completely. 14. Makes about 5 dozen clusters. 15. Store in an airtight container.. |
