Ingredients:
6 ounces italian bread, cut into 1-inch cubes (about 3 1/2 cups) |
vegetable cooking spray |
2 1/2 cups 1% low-fat milk |
1/3 cup maple syrup |
2 tablespoons sugar |
1 teaspoon vanilla extract |
1/2 teaspoon ground cinnamon |
1/8 teaspoon salt |
1/8 teaspoon ground nutmeg |
2 egg whites |
1 egg |
1/3 cup raisins |
Directions:
1. Arrange the bread cubes in a single layer on a baking sheet. Bake at 325° for 10 minutes. Place bread cubes in an 8-inch square baking dish coated with cooking spray. 2. Combine milk and next 8 ingredients in a medium bowl, and stir with a wire whisk until well-blended. Stir in raisins. Pour milk mixture over bread, tossing gently to coat. Let the mixture stand 40 minutes. 3. Bake at 350° for 1 hour and 10 minutes or until pudding is set. Serve warm. |
