Maple Bran Muffins

Ingredients:
2 eggs
3/4 cup pure maple syrup
3 cups bran flakes, crushed
1 cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup sour cream
3/4 teaspoon vanilla extract
Directions:
1. Preheat oven to 400°; line 12-cup muffin pan with paper liners.
2. In a large bowl, whisk together eggs and syrup until well blended and frothy.
3. Stir in bran flakes; let stand 5 minutes.
4. In another bowl, whisk together the flour, baking soda, and salt.
5. Stir sour cream and vanilla into the cereal mixture until blended.
6. Add to the flour mixture and stir until just blended.
7. Divide batter equally among prepared muffin cups.
8. Bake for 19-24 minutes or until tops are golden and a pick comes out clean.
9. Let cool in pan on a wire rack for 3 minutes, then transfer to the rack to cool.
