MAPLE BOURBON GLAZED CARROTS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Tillman Estate in Forney, Texas in 1982. Ingredients:
2 pounds carrots peeled and sliced |
water |
1/2 cup butter |
1/4 cup maple syrup |
2 tablespoons bourbon |
2 tablespoons cooking liquid |
1 teaspoon dry mustard |
1/4 teaspoon dried tarragon |
1/2 teaspoon salt |
1 teaspoon freshly ground black pepper |
Directions:
1. Plunge carrots into boiling water in large saucepan. 2. Cover partially and cook 12 minutes. 3. Drain and reserve 2 tablespoons cooking liquid then set carrots aside. 4. In same pan melt butter over very low heat. 5. Add remaining ingredients plus reserved cooking liquid. 6. Cook and stir 5 minutes until well blended; then add carrots and heat through. 7. Cook and shake pan until carrots are well glazed and heated thoroughly. 8. Serve immediately. |
