Maple Bilberry Cornbread Muffins |

As I had cornmeal, maple syrup and bilberries handy I decided to combine two recipes. One was for just plain cornbread from Joy of Cooking and the other was from a Vermont Maple Syrup cookbook for a maple cornbread. Read more . Substitute blueberries for the bilberries if you are in the U.S. :) Ingredients:
1 1/4 cup corn meal |
1 cup whole wheat flour |
3 tsp baking powder |
1/2 tsp salt |
1 egg, well beaten |
1/2 cup maple syrup |
3/4 cup milk |
3 tbsp melted butter or margarine |
1 cup bilberries |
Directions:
1. Mix the dry ingredients together. 2. Stir in the other ingredients until well blended but don't beat. 3. Grease a muffin pan and pour batter into the muffin pan. 4. Fill about 2/3 full. 5. Bake for about 20 minutes at 400 degrees. 6. Recipe makes 12 muffins. |
