Preparation time does not include soaking the beans. UPDATE - I have since made this recipe and the flavours are very mild - too mild for me so you might want to be a bit heavy handed - I also added a can of diced tomatoes and cooked them for an extra hour. Ingredients:
1 1/2 lbs dried white beans (navy) |
1 cup maple syrup |
4 ounces salt pork or 4 slices bacon, diced |
1/4 cup chili sauce |
1 onion, diced |
1 teaspoon salt |
1 teaspoon dry mustard |
black pepper |
Directions:
1. Place beans in large saucepan and cover with cold water. 2. Bring to the boil and simmer 2 minutes. 3. Remove from heat and stand covered for 1 hour. 4. Drain and reserve liquid. 5. In a small bowl combine syrup, sauce, onion salt and mustard. 6. Place 1/2 the beans in a 1 quart casserole dish. 7. Top with diced pork or bacon. 8. Add remaining beans. 9. Pour maple syrup mixture over beans. 10. Add 1 1/2 cups of reserved bean liquid. 11. Cover and bake at 300 degrees for 2 hours. 12. Stir occasionally and add more reserved liquid id need be to keep beans moist. |
