Maple and baconmy two favorite breakfast flavorsare combined in these grab-and-go muffins, writes Trisha Kruse of Boise, Idaho. They're quick to fix, especially if you use your microwave to cook the bacon. Ingredients:
2 cups king arthur unbleached all-purpose flour |
3 teaspoons baking powder |
1/4 teaspoon salt |
1 egg |
1/2 cup 2% milk |
1/2 cup canola oil |
2/3 cup maple syrup |
8 bacon strips, cooked and crumbled |
Directions:
1. In a large bowl, combine the flour, baking powder and salt. In another bowl, combine the egg, milk, oil and syrup. Stir into dry ingredients just until moistened. Fold in bacon. 2. Fill greased or paper-lined muffin cups two-thirds full. Bake at 400° for 20-25 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pan to a wire tack. Serve warm. Refrigerate leftovers. Yield: 1 dozen. |
