A great after-school snack. (This recipe is from the cookbook How It All Vegan .) Ingredients:
1 cup silken tofu |
1/2 teaspoon cinnamon |
1/2 teaspoon vanilla extract |
1/4 cup maple syrup |
1 -2 medium apple |
Directions:
1. In a blender or food processor, blend together the tofu, cinnamon, vanilla, and maple syrup until smooth. 2. Spoon into a small bowl and use as a dip for the slices of apple and other fruit. |
