Maple and Orange Glazed Carrots |

1 tablespoon butter |
2 teaspoons grated fresh ginger |
1 bunch scallion, chopped (reserve 2 t of the green part for garnish) |
1 lb carrot, peeled and sliced into 1/4 inch rounds |
2 teaspoons grated orange zest |
1 cup orange juice |
3 tablespoons maple syrup |
1 tablespoon chopped fresh lemon thyme |
salt and pepper |
Directions:
1. In a medium saucepan, melt butter. 2. Add ginger and the white part of the scallions and sauté for 1 minute. 3. Add carrots, orange zest and juice. 4. Cover pan, bring to a boil, then reduce heat and simmer until carrots are just tender, about 12-15 minutes. 5. Add maple syrup and lemon thyme and cook uncovered, stirring frequently until the liquid becomes syrupy, about 5 minutes. 6. Add salt and pepper to taste. Serve garnished with chopped scallion tops. |
