Maple Almond Ricotta Crepes |

The Horn of the Moon by Ginny Callan Ingredients:
10 crepes |
3/4 cup almonds |
2 tablespoons water |
3 cups ricotta cheese |
1/2 cup maple syrup |
1 teaspoon almond extract |
fresh fruit |
Directions:
1. Put almonds into a food processor and grind until very fine. 2. Add water and blend into a smooth paste. 3. In a medium bowl, mix ground almonds with ricotta cheese, maple syrup and almond extract. 4. Put 1/3 cup filling across the middle of each crepe. If desired, sprinkle with fresh fruit. 5. Roll each crepe up. Bake 10 minutes at 375 in a buttered 9 by 12 inch baking dish. |
