From Riana Mahe. Adapted from Sam Choy's Polynesian Kitchen. As a substitute for a deep pot, this will sometimes be baked in a large coffee can, using foil as a lid. Prep time includes rising time. Ingredients:
1 tablespoon yeast |
1 1/2 cups warm water |
1 cup sugar |
4 cups flour |
Directions:
1. Combine yeast, water and sugar in a large mixing bowl. 2. Add all the flour at once. 3. Mix well. 4. Knead a few minutes until smooth and elastic. 5. Grease a deep pot with a lid. 6. Place dough in pot and cover. 7. Let rise for 1 hour, or until doubled in size. 8. Preheat oven to 350°F. 9. Bake, covered, for 45 minutes. 10. Remove lid and bake an additional 15 minutes. 11. Remove from oven and take bread out of pot. 12. Serve hot with honey-citrus butter. |
