Adapted from Celtic Cookbook. From the Isle of Man. Ingredients:
2 medium potatoes, parboiled and thickly sliced |
2 whole herrings, cleaned |
onion, slices |
Directions:
1. Preheat oven to 425°F. 2. Place potatoes in a shallow baking dish. 3. Place fish on top of potatoes. 4. Bake for 10 minutes, or until fish and potatoes are cooked. 5. Serve with raw onion. |
