1 tablespoon vegetable oil |
2 cups chopped cabbage |
1 cup chopped onion |
3 cups water |
3 cups vegetable broth |
1 (6 ounce) can tomato paste |
1 cup sliced celery |
1 cup sliced zucchini |
1 cup sliced carrot |
1 cup diced peeled boiling potato |
1/2 cup frozen lima beans |
1/2 cup cut green beans (fresh or frozen) |
1/2 teaspoon dried thyme |
1/4 teaspoon salt (to taste) |
1/3 teaspoon pepper |
Directions:
1. In a 4-quart pot, heat the oil over med-high heat; add in cabbage and onions; cook, stirring, until softened, about 4 minutes. 2. Stir in the water, vegetable broth, and tomato paste until combined. 3. Add the remaining ingredients; bring to a boil; reduce heat and simmer, uncovered, 30 minutes. 4. *May use corn instead of lima beans. |
