Dad W's recipe Ingredients:
21 g. butter, 1 1/2 tbsp. |
238 g. chopped onions, 2 cups |
135 g. chopped celery, 1 cup |
2 cups chopped carrots |
167 g. chopped green pepper, 1/2 cup |
70 .5-ounce) cans diced tomatoes |
51 ounce chopped clams |
2 cups chicken broth |
1 1/2 tsp. thyme |
1/2 tsp. white pepper |
1/4 tsp. curry powder |
695 g. diced potatoes, 4 cups |
Directions:
1. In Dutch oven, brown onions in butter. 2. Add remaining vegetables (except potatoes). 3. Add broth from clams (clams will be added later) and chicken broth. Add spices. Simmer about 15 minutes. 4. Add potatoes. Simmer about 20 minutes. 5. Turn off heat and add clams about 2 minutes before serving, to heat without overcooking. |
