16 oz tomatoes, canned crushed, juice reserved |
1 1/2 cups water |
1 1/4 cup celery, 2 medium ribs, chopped |
2/3 cup onion, 1 medium, chopped |
4 oz red potato , finely diced |
1/3 cup green bell pepper, finely diced |
1/4 teaspoon thyme leaves |
7 oz clams minced, juice reserved |
1 1/2 teaspoon lemon juice |
1 salt and pepper |
Directions:
1. in a medium non-reactive saucepan, combine tomatoes with their juice, water, celery, onion, potato, bell pepper, and thyme. Bring to a boil, reduce heat to medium, and simmer uncovered until vegetables are just tender, 7 to 10 minutes. 2. Add clams with their liquid and lemon juice. Simmer 2 minutes. Season w/ salt and pepper and serve hot. |
