Mango with Ginger-Mint Syrup (Bobby Flay) |

Ingredients:
1 cup water |
1/2 cup sugar |
1 (2-inch) piece fresh ginger, thinly sliced |
1/4 cup packed fresh mint leaves |
2 ripe mangoes, peeled, pitted, and thinly sliced |
ginger or vanilla ice cream, or vanilla yogurt, for serving |
Directions:
1. Bring water and sugar to a boil in a saucepan and cook until sugar is melted, stirring occasionally. Add the ginger and cook for 1 minute. Remove from the heat, stir in the mint and steep for 5 minutes. Place the mango in a bowl, strain the syrup mixture over the mango, cover, and let chill in the refrigerator for 30 minutes. Serve over ice cream or topped with vanilla yogurt. |
