From Coastal Living. I would serve this on a spinach and/or seafood salad. They pair it with scallops. Yum! Ingredients:
1 cup diced mango |
1/4 cup fresh orange juice |
1/4 cup rice vinegar |
2 tablespoons fresh lime juice |
1 tablespoon light brown sugar |
salt |
fresh ground black pepper |
Directions:
1. Process first 5 ingredients in a blender or food processor until smooth. 2. Stir in salt and pepper to taste. |
