Mango Under Kiwis (Michele Urvater)

Ingredients:
2 ripe mangoes, peeled and chopped
dark rum (or lime juice) to taste
superfine sugar or exotic honey ((leatherwood honey from tasmania) - to taste
4 chilled kiwis, peeled and thinly sliced
fresh mint leaves for garnish
Directions:
1. Puree mango through a food mill; season to taste with lime juice, sugar or honey. Spread puree on bottom of a chilled dessert plate and center kiwi slices in the middle; garnish with mint.
