Ridiculously easy to whip together using a food processor, these blondie-like bar cookies are filled with the flavours of the tropics. Great for the next BBQ! Ingredients:
1 cup mango chutney |
2 eggs |
3/4 cup nonfat plain yogurt |
1/2 cup packed dark brown sugar |
1/4 cup vegetable oil |
1/3 cup unsweetened applesauce |
2 tablespoons dark spiced rum |
1/4 teaspoon salt |
2 teaspoons ground ginger |
1 teaspoon cinnamon |
1/4 teaspoon ground cloves |
1 cup all-purpose flour |
1 cup whole-wheat flour |
1/2 cup dried cranberries |
Directions:
1. Preheat oven to 350° F, and grease a 9 pan. 2. Purée chutney in a food processor until smooth. 3. Add eggs, yogurt, brown sugar, oil, applesauce rum, salt and spices. Process until smooth. Add flours and with on-off pulses, process just until blended. 4. Add cranberries and pulse to blend. 5. Scrape into pan and bake 35 minutes. 6. Cool completely before cutting and serving. |
