I found this in a recipe for tonge, serving it over slices. It would be good over chicken, fish or pork too. As it is sweet, it would also be a good dessert sauce Ingredients:
4 mangoes, peeled and sliced |
8 1/2 ounces orange juice |
2 ounces water |
2 ounces honey |
3 1/2 ounces brown sugar |
1 3/4 ounces vinegar |
1 ounce lemon juice |
salt |
1 teaspoon ground ginger |
Directions:
1. Simmer mangoes, orange juice and water until mangoes are soft, puree. 2. Add remaining ingredients, cook a further 10 minutes, stirring all the time. |
