This was labeled a chutney, however since it is not cooked, I consider it a salsa. Ingredients:
2 cups mangoes, diced |
1/4 cup chinese black preserved beans, rinsed |
1/4 cup green onion, thinly sliced on the bias |
1/4 cup red onion, diced |
2 tablespoons ginger, grated |
2 jalapeno peppers, red sliced in thin circles no seeds |
1 red pepper, diced |
1/2 cup oregano, fresh chopped |
1 teaspoon lime zest |
1 teaspoon orange zest |
2 tablespoons lime juice |
3 tablespoons orange juice |
1/4 cup rice wine vinegar |
1 cup olive oil |
1 tablespoon cumin seed, toasted |
