This salsa is very simple, with few ingredients, but has so much flavor! Sweet but spicy, it goes well with chicken, pork or just corn chips. It has a lot of color and looks great with a mix of red, yellow, and blue tortilla chips. Ingredients:
2 mangoes - peeled, seeded, and chopped |
1 (8 ounce) can pineapple tidbits, drained |
1/4 cup chopped fresh cilantro leaves |
2 tablespoons peeled and finely chopped fresh ginger |
1/2 cup chopped red onion |
1/4 cup rice vinegar |
1 teaspoon crushed red pepper flakes, or to taste |
Directions:
1. Combine mango, pineapple, cilantro, ginger, red onion, vinegar, and red pepper flakes in a bowl, and stir lightly to mix well. |
