To celebrate her birthday, Helen Claire's family held a feast at their historic vacation home near St. Augustine, Florida. Personal chef Kitty Boswell-Herda served grilled snapper topped with this mango salsa. Ingredients:
3 ripe mangos, peeled, seeded, and coarsely chopped |
1/2 sweet onion, chopped |
1 tomato, seeded and chopped |
3 tablespoons chopped fresh cilantro |
3 tablespoons fresh lime juice |
3/4 teaspoon garlic salt |
Directions:
1. Combine all ingredients; cover and chill. Serve as a relish for grilled fish or with chips. |
