This recipe was created to accompany Pork Tournedos with Blackberry Gastrique and Mango Salsa. Ingredients:
1 firm-ripe mango, pitted, peeled, and cut into 1/4-inch dice |
2 tablespoons finely chopped red onion |
1/4 teaspoon freshly grated lime zest |
1 tablespoon fresh lime juice |
2 tablespoons fresh mint leaves, chopped |
Directions:
1. In a bowl stir together salsa ingredients with salt to taste and let stand, covered, at room temperature. Salsa may be made 2 hours ahead and kept at room temperature, covered. |
