This Salsa is an amazing topper to my Caribbean Black Beans, but it is also delicious on its own! Mangoes are the base for a sauce that manages to tantalize all the taste buds; sweet, sour, spicy, and pungent.
Ingredients:
2 medium ripe mangoes
1 small cucumber, peeled, seded, and diced
1 ripe tomato, chopped
1 lime, juice of
1 pinch salt
1/2-1 small poblano chile, minced finely
1 tablespoon chopped fresh cilantro
Directions:
1. Peel and chop the mangoes.
2. In a large bowl, mix together the mangoes, cucumber, tomato, lime juice, salt, chile, and cilantro. Let sit for 10 minutes to allow the flavors to blend before serving.
3. This Salsa keeps, refrigerated, for 2 or 3 days.
