Good with cooked fish, or with blue corn tortilla chips. Ingredients:
2 mangoes, peeled,seeded,and cut into 1/4 inch dice |
1 1/2 tablespoons minced fresh jalapeno peppers, seeded and diced (about 1 medium) |
1/4 cup coarsely chopped fresh cilantro |
2 tablespoons fresh lime juice |
1/2 teaspoon kosher salt |
1/4 teaspoon fresh ground black pepper |
1 tablespoon minced shallot |
1 cup chopped, fresh sweet onion |
Directions:
1. In a medium bowl, combine all ingredients. 2. Toss gently. 3. Chill for 1 hour. |
