Good with cooked fish, or with blue corn tortilla chips.
Ingredients:
2 mangoes, peeled,seeded,and cut into 1/4 inch dice
1 1/2 tablespoons minced fresh jalapeno peppers, seeded and diced (about 1 medium)
1/4 cup coarsely chopped fresh cilantro
2 tablespoons fresh lime juice
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
1 tablespoon minced shallot
1 cup chopped, fresh sweet onion
Directions:
1. In a medium bowl, combine all ingredients.
2. Toss gently.
3. Chill for 1 hour.
