Mango Salad from Publix

Very tasty and rich yet light salad.
Ingredients:
4 mangoes, ripe
2 limes
1/4 teaspoon salt
1/8 teaspoon pepper
1 tablespoon olive oil
1/2 cup pecans, chopped
6 ounces baby spinach, fresh
Directions:
1. Peel mangos; cut into slices. keep fruit from one mango separate.
2. Squeeze juice of both limes into blender (about 1/3 cup).
3. Add fruit of one mango, salt. pepper and oil. Process until smooth, set aside.
4. Heat pecans in small saute pan until warm, golden and fragrant.
5. Place spinach greens on serving plates, arrange remaining mango slices on top. Sprinkle with pecans, drizzle with dressing and serve.
