Mango Rita (Non-Alcoholic) |

This recipe comes from the 2009 cookbook, Zero-Proof Cocktails. Ingredients:
1 lime, for rimming |
2 tablespoons coarse salt, colored, for rimming |
2 mangoes (1 peeled, seeded, diced, 1 peeled, seeded, sliced) |
1 cup ice, crushed |
1 cup margarita mix |
1/4 cup orange juice |
Directions:
1. Rut the lime wedge around the rims of 2 margarita glasses, then dip the rims of the glasses in the salt. 2. In a blender, combine the DICED mango, ice, margarita mix & OJ, then puree until smooth. 3. Divide the mixture beetween the 2 rimmed glasses & serve garnished with a slice or two of mango. |
