Sweet and tangy, this couscous is perfect during the summer with fish or grilled chicken. Ingredients:
1 cup coucous |
1 mango, peeled, pitted, and cut into 1 inch cubes |
1 jalapeno chili, seeded and ribs removed, finely chopped |
1/2 cup raisins |
1 ripe tomato, chopped |
2 tbsp. olive oil |
1 garlic clove, minced |
1/4 cup loosely packed small cilantro sprigs, chopped (be careful not to add to much, to much cilantro will give it a soapy taste) |
1/4 cup loosly packed small parsley sprigs, chopped |
juice of 1 lime |
salt to taste |
Directions:
1. Cook coucous according to package. Drain and set aside. 2. Over high heat, in a lrg. saute pan, heat 1 tbsp. of olive oil. Add garlic, jalapeno, and mango. Saute until mango begins to color lightly (it will be similar to a peach). Stir in remaining tbsp. of olive oil, the coucous, tomato, lime juice, raisins, cilantro, and parsley. Toss to heat through, season with salt to taste and serve. Can be served at room temp. |
