I got this recipe from my son-in-law's mom. Ingredients:
1 cup mango puree |
1 3/4 cups flour |
1 teaspoon baking soda |
1 teaspoon cinnamon |
1/2 teaspoon ginger |
1/2 teaspoon salt |
1/4 teaspoon nutmeg |
1/2 cup butter, soft |
1 1/4 cups sugar |
3 eggs |
1 teaspoon vanilla |
3/4 cup raisins |
Directions:
1. Combine dry ingredients. 2. Using medium speed beat butter and sugar till fluffy. 3. Beat in eggs one at a time till blended. 4. Beat in vanilla and margarine. 5. Stir in flour mixture just till moist. 6. Fold in raisins. 7. Spoon into loaf pan and bake at 350° for 1 1/4 hours. 8. Cool in pan 10 minutes. |
