Vegan, Gluten-Free, Soy-Free, Corn-Free Ingredients:
1/2 cup quinoa |
1/2 cup mango, diced |
1 1/2 cup zucchini, grated |
1/2 cup bell pepper, chopped |
1 tbsp ginger, crushed |
1 tsp curry powder |
1/2 tsp salt |
Directions:
1. Combine the quinoa and water in a saucepan. Bring to a boil, reduce heat, and cook covered for 10 minutes. Check to see that there is still water in the quinoa; if not, add 2 tablespoons of water. Cover and cook on low for 5 minutes, or until water is absorbed and quinoa is tender. 2. Put the quinoa into a large serving bowl and add the zucchini, bell peppers, ginger, curry powder and salt 3. Refrigerate until chilled and add mango just before serving. |
