A spicy sweet pickle, excellent for enjoying on its own or as a side to a complex meal. Ingredients:
1 large firm mango, peeled and slived 3/4 thick |
1/4 c sugar |
10 thin slices fresh ginger |
2 dried red chilies, sliced at the tip |
1 garlic clove, halved lengthwise |
1/2 tsp coarsely cracked black peppercorns |
1/2 tsp salt |
1/4 c. white wine vinegar |
Directions:
1. Pack the mango into a 1 quart jar. 2. Combine the sugar, ginger, chilies, garlic, salt and pepper in a saucepan and simmer until the sugar melts. 3. Remove from heat, and stir in the vinegar. 4. Pour over the mango slices and cool to room temperature. 5. Refrigerate and let sit for at least a couple days before enjoying. |
