Inspired by my dear friend cholen's mango tango recipe...This is a simple cake.when i saw some mangoes in the market and decided to make a simple fresh mango cake. Ingredients:
* for the cake |
* 1 1/2 c cake flour , 1 tsp baking pwd and pinch of salt |
* 125 g butter |
* 1 c castor sugar |
* 2 egg whites and yolks |
* 1 tsp vanilla |
* 1/2 c fresh milk |
* 3 thai mangoes |
1 mango cut into small cubes |
* puree |
* 2 medium size thailand mangoes |
* 1/2 c caster sugar |
* 100 g cream cheese-philadelphia |
* 2 tbsp plain yogurt,11/2 tsp gelatin powder |
* blend everything and keep it aside |
Directions:
1. 1. Pre heat the oven to 175 deg . 2. 2. Beat the butter and sugar until creamy 3. 3. Add the egg yolks and vanilla 4. 4. Fold in the flour and milk alt. starting and finishing with the flour 5. 5. Fold in the beaten egg whites 6. 6. Pour in a cake pan and bake for 30 mins 7. 7. When cool slit into 2 . 8. 8. Place one layer back on the cake tin 9. 9. Spread the puree for 2-3 tsp 10. 11. Sprinkle one mango on top 11. 12. Place the other layer of cake on top 12. 13. Pour the puree on top 13. 14. Spread evenly 14. Decorate on ur own taste 15. 15. Chill for atleast 4 to 6 hours |
