You have got to try this! Refreshing in hot weather. Excellent side dish with sea bass (with scallions, ginger and lime) and snow peas, or atop grilled chicken.
Ingredients:
1-2 mangoes
1 red medium onion
1 1/2 cups of corn
1/3 cup fresh cilantro
1 can black beans (drained and rinsed)
3 t lime juice
3 t mongolian fire oil (by house of tsang, available at most grocery stores)
Directions:
1. the above ingredient quantities are estimates (as I make this without measuring anything, and am just going by memory)
2. peal and chop mangoes into 1/4 chunks
3. chop cilantro finely
4. add all ingredients in bowl and mix. Let sit awhile.
5. serve slightly chilled
