Mangoes are my fave . And to be honest , quite tired of baking chocolate cake all the time . So wanted to try something new , like jelly topping ( thin layer ) with lotsa cream cheese filling . The result is just so yum yum ! Read more !!! Ingredients:
sponge base |
21 cm sponge cake , split into 2 |
( buy a ready made one and just follow the box instruction ) |
filling |
500 gm cream cheese , soften |
80 gm caster sugar |
300 gm mango puree , sieved |
2 egg yolks |
4 tbsp gelatine powder |
120 gm water |
300 gm whip cream |
1 tsp mango essence |
topping |
fresh mango slices from 2 large mangoes |
8 tbsp nuts , roasted and powdered |
5 tbsp sugar syrup |
jelly layer |
1 box lemon flavoured jelly pwd |
1 c hot water |
1 c cold water |
4 tsp gelatine powder |
Directions:
1. BASE : 2. Bake the 9 inch vanilla sponge cake and cool it . 3. Split into 2 . 4. FILLING : 5. Beat the cream cheese and sugar till smooth. 6. Add the yolks and combine well . 7. Add the mango puree and mix . 8. Microwave gelatine in hot water . 9. Add into the above mixture. 10. Whip up the cream till soft peak. 11. Add to the above and whisk to blend well . 12. SETTING : 13. Arrange a slice of the cake in a 9 inch loose bottom pan . 14. Spread the filling on top . 15. Arrange the other slice of cake on top . 16. And spread evenly the remaining filling on top . 17. This layer of filling should be thick . 18. Now chill it till 3/4 set. 19. TOPPING : 20. On top of the filling , arrange the mango slices in such a way dat dey overlap 21. Chill for another hour or so . 22. JELLY LAYER : 23. Mix jelly powder and gelatine in hot water and stir until dissolved . 24. Now add the cold water . 25. When it cools abit , pour it over the mangoes and chill it sets . 26. Brush the sides with sugar syrup and sprinkle crushed nuts . 27. Serve chilled . |
