You'll like the sunny color and fruity flavor of this light dessert. Note: this my be low-carb for some, but too high for Diabetics. Ingredients:

3 cups chopped peeled mangoes or fresh peaches ( about 2 pounds ) |
1/2 cup cold water |
1 cup sugar or ( sugar substitute equivalent to 1 cup sugar ) |
2 tbs. lemon juice |
Directions:
1. In a food processor or blender, combine mangoes and water; cover and process until smooth. Add the sugar or sugar substitute and lemon juice; cover and process until sugar or sugar substitute is dissolved, about 1 minute. Freeze in an Ice Cream Freezer according to the manufacturer's directions. Transfer to a freezer container; cover and freeze for 1 hour until firm. Yield: 6 servings. 2. Note: If you can't find mangoes, substitute fresh peaches. To peel the peaches, drop them into boiling water for a few seconds. Then you can easily slip the skins right off. 3. Serving size: 1/2 cup, Calories per serving: 184, Fat: trace, Cholesterol: 0, Sodium: 2mg, Carbohydrate: 48g, Fiber: 2g 4. NOTE: Due to the carbohydrate count it is over and if you had this at a meal that is all you could have or have 1/2 of the 1/2 cup . Why have any? |
