I have had this in my private recipes for a long time now. I don't remember why, so thought I would make it public. Ingredients:
1 large mango, peeled and seed removed |
1 medium red onion |
4 -6 garlic cloves |
10 -15 habanero peppers |
2 tablespoons fresh ginger |
1/2 teaspoon turmeric |
1/4 teaspoon cumin |
1/4 teaspoon coriander |
1 tablespoon honey |
1/2 cup cider vinegar |
2/3 cup sherry wine |
1 tablespoon salt, to taste if desired |
Directions:
1. In a saucepan, bring vinegar, sherry, and salt to boil. 2. Purée remaining ingredients in a blender, then transfer mixture to a bowl. 3. Pour vinegar mixture over mango mixture and stir well. 4. Allow to cool before bottling. 5. Keep refrigerated for 3 weeks or more. |
