Mango Drunken Fool Parfait |

Grown up dessert! I serve them in oversized white wine glasses. from Relish Magazine Ingredients:
1 1/2 c pureed fresh mango (about 1/1/2-2 large mangoes) |
2/3 c confectioner's sugar |
3 tbs fresh lime juice |
3 tbs rum (i like gosling's) |
1 1/2 c heavy cream, whipped |
3 c chopped mango (4-5 mangoes) |
1 c heavy cream, whipped for garnish |
Directions:
1. Combine mango puree, sugar, lime juice and rum. 2. Fold in whipped cream. 3. Place 1/4 c chopped mango in each of the 6 parfait glasses. 4. Top with 3/4 c of the mango cream mixture followed by a 1/4 c chopped mango. 5. Top off with remaining mango cream and garnish with additional whipped cream if you like . |
